Recently I was flipping through one of my "Girlfriend" magazines from a few months ago and I discovered a amazing recipe! The basis of this recipe is from "Girlfriend Magazine" but I have changed a few ingredients and added my own touch.
INGREDIENTS
LOAF
- 125 grams unsalted butter, chopped and softened(I just put it in the microwave for about 20 seconds)
- 1 cup caster sugar
- 2 eggs
- 1 cup over-ripe mashed banana
- 1/2 cup buttermilk
- 1/3 cup milo
- 1 2/3 cups plain flour
- 2 tsps baking powder
- 1/2 tsp bicarbonate soda
- Extra Milo to decorate
FROSTING
- 150 grams cream cheese, chopped
- 75 grams unsalted butter at room temperature
- 1 1/2 cups icing sugar
METHOD
1 Preheat the oven to 180 degrees, then grease a brownie pan with butter.
2 Beat butter and sugar in a large bowl with an electric mixer until fluffy. Beat in eggs, one at a time, until fully combined.
3 Add banana, buttermilk, Milo, and combined sifted flour, baking powder and bi-carbonate of soda. Stir to combine, pour into pre-greased brownie pan.
4 Cook in oven for about 20-25 minutes, or until a skewer inserted into the middle of cake comes out clean. Cool for 5 minutes before removing from pan.
5 To make the frosting, beat the cream cheese and butter together in a small bowl with an electric mixer until smooth. Slowly beat in sugar.
6 Spread frosting onto cakes. Decorate with the extra Milo on top of each loaf!
I really hope you enjoy these cakes as much as I did! They were so delicious and fun to make!
